Sugar-free chocolate chip cookies
Ingredients:
- ½ cup plant-based butter or coconut oil, melted
- 3 Tbsp Truvia (we like Lifestyle Food Stevia Powder)
- 1 large egg
- 2 tsp vanilla extract
- 2 cups almond flour
- ½ tsp salt
- 1 tsp baking soda
- 1 cup sugar-free chocolate chips (We like Lifestyle Food Sugar Free Dark Chocolate Chips)
Method:
- Preheat your oven to 200°C, and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the melted plant-based butter or coconut oil, stevia, egg, and vanilla extract, until smooth.
- Slowly add the almond flour, salt, and baking soda to the bowl, then stir gently to combine.
TOP TIP: If the dough is too runny, simply add a little more almond flour until it reaches the desired consistency
- Fold in the sugar-free chocolate chips.
- Using a tablespoon, scoop cookie mixture onto the baking sheet.
- Use your fingers to flatten the dough into cookie shape, and make sure there’s enough space between each cookie.
- Bake for 12-15 minutes until the cookies are golden brown on the edges.
